Thái lát mỏng sả, ớt, hành tím. Sả thái xong thì cho vào cối dã nát vừa. Sau đó đem rang trên chảo khô cho thơm khoảng 10p (giúp thơm hơn và bảo quản được lâu hơn). Cho ra đĩa để riêng.
Cho 200ml nước sôi vào mắm ruốc khuấy đều cho tan mắm. Đổ 100ml nước sôi vào me ngâm cho nở.
Cho phần me ngâm nước vào chảo đung liu riu cho me mềm và ra chất (không bỏ hạt để ăn cho vui miệng). Sau đó cho đường phèn nâu (có thể dùng đường trắng) khuấy đều đến khi đường tan.
Tiếp tục cho mắm ruốc vào nấu, thêm vào đó 200ml nước lọc và đun sôi lửa vừa. Vừa đun vừa khuấy cho đến khi hỗn hợp sệt lại còn 1/2 - 3/4 nước ban đầu là được, khoảng 30-40 phút.
Cho thêm sả ớt hành tím đã rang và tiêu sọ dã nát vào trộn đều. Đun nhỏ lửa trên bếp chừng 10 phút. Để nguội rồi cho vào hủ bảo quản hoặc dùng ngay cũng được.
